Roasted aubergines made fresh in our kitchen, rest on a bed of delicious gentile italian ricotta, creating a perfect combination of flavors that goes amazingly with our very own homemade red pesto. The pesto is made with sun dried tomatoes and walnuts, Grana padano DOP, italian Extra virgin olive oil and fresh basil. Topped up with a generous serving of Grana Padano flakes, all to be served in our delicious focaccia, soft and fluffy on the inside, crunchy on the outside, ready to be on the dinner table in minutes!

The box contains enough ingredients to serve four generous portions, it can be kept in the fridge for up to 4 days.

Instructions

All you have to do is to briefly warm up the focaccia in a hot oven, put together the sandwiches with the help of our recipe that also comes in the box, and this unforgettable treat is ready to amaze you and your guests.

Divide the focaccia into four equal parts, and slice them in half. Cover the bottom half with a spoonful of the red pesto. Divide the ricotta into four equally sized portions, place it on top of the pesto. The roasted aubergines come next, drizzle the oil all over, add some more pesto. Top it up with the flakes of Grana Padano, and the sandwich is ready to serve!

Tips

Add some extra virgin olive oil and chilli flakes for an extra kick. You can also add some rucola, fresh parsley and tomatoes to the sandwich.

Serve the focaccia with a nice red wine such as a Chianti, Cabernet Sauvignon, or a Merlot.
