Focaccia is a oven-baked type of bread made from our signature homemade pizza dough, but baked differently so that it rises more, it’s very soft and fluffy on the inside, and a bit crunchy on the outside. Stuffed with pieces of delicious roasted garlic and topped with grilled aubergines and sweet roasted tomatoes, drizzled with our homemade rosemary and garlic infused olive oil, every bite of this flavorsome focaccia brings pure happiness!

How to serve it

Eat it as is, ad more toppings to it, or do what we often do, slice it in half and make delicious sandwiches! When it comes to food and flavor combinations, think about your favorite dishes with aubergines and get creative: basil, capers, green olives, goat cheese, lamb or pretty much any grilled meat, artichokes… all go perfectly with garlic, tomato and aubergines.

We like to serve this focaccia when we’re out grilling. It will compliment and elevate almost anything you put on your grill, weather it’s meat or veggie based.

Wine pairings

In general, you’ll find that most dry red wines with some freshness work really well with our aubergine & tomato focaccia. Reach for a Primitivo or a Zinfandel, or stick with a classic Chianti, you will not go wrong.


Our pizzas and focaccias are made using only natural ingredients – there are no additives, no preservatives, no E-numbers, no artificial flavorings.

Keep refrigerated up to 5 days, frozen up to a month. Leave to cool 3-5 minutes after baking.

We jump on our fiets and deliver to your door:

– orders placed before 14:00, Monday through Saturday, are delivered the the same day after 17:00;
– orders placed after 14:00 are delivered the next day after 17:00;
– orders placed from Saturday after 14:00 and over the weekend, we deliver on Tuesday.

Baking Instructions: Roasted Garlic Stuffed Focaccia Topped with Baked Aubergine and Tomatoes 🌱

Short version:

  • Leave the focaccia outside to reach room temperature;
  • Preheat oven to 220° – 230°
  • Place the focaccia in hot oven for 5 – 10 minutes
  • Let cool for 3 – 5 minutes
  • Enjoy!

Long version:

Preheat your oven to 220°, and leave it running at the temperature for at least 20 minutes, so it’s nice and hot. Place the baking tray in the oven, you want it to be as hot as possible to get a crunchier bottom on your focaccia. If you have a pizza stone, set it on the bottom of the oven and leave the oven running for at least 45 minutes to make sure the stone is hot enough.

When your oven is nice and hot, take the focaccia out of the packaging (remove the cling film). At this point, you might want to add some olive oil on the focaccia, or any toppings you might enjoy. Pop the focaccia directly in to the hot oven, on the preheated baking tray.

Depending on your oven settings and desired crunchiness, bake it for about 5 – 10 minutes. Keep an eye on it, when the crust reaches a nice golden-brown color, the focaccia is ready!

Take it out of the oven, and leave it out to cool for 3 – 5 minutes, preferably on a cooling rack. If you want to top your focaccia with some fresh ingredients, this is the time to do it. We recommend a nice fresh mozzarella Burrata, rucola, fresh cherry tomatoes cut in quarters and some black olives.

Meat lovers can opt for thin slices of prosciutto, mortadella or… well, we’re sure you’ll make your own twist, just keep in mind that you can build an amazing sandwich with our focaccia.
